Winemaking notes :

Done only when great vintage.

Vinified and matured in wooden tun and wooden barrel during 10 to 12 months on fine lees, then 4 to 6 months in stainless steel.
Alcoholic fermentation between 18 and 20°C.

Tasting notes :

It is recommended to decant it in order to let its pureness and flinty mineral taste go out.
"Majorum" should be served with a fried foie gras, a grilled lobster, fish in butter sauce or while concocting a very sophisticated sauce.
